You can do it ๐ณ with canned ๐ฅซ but I went with fresh ๐ฅ ๐ฆ . I start with a pound ๐ฏ ๐จ of salmon ๐๐ (fresh or canned), take half of it and put it in a food processor ๐ with 1 egg ๐ณ ๐ฆ๐ฆ๐ฆ and 1/4c of fresh parsely โ๏ธ ๐ชด ๐ฌ ๐ . Pulse it a few times ๐ ๐ until you have a coarse grind ๐ ๐ณ . Take the other half of the salmon ๐ฃ and cut it into a 1/4" dice, put it in a bowl ๐ฅด with 1/3-1/2c (depending on preference) of panko, 1/2 cup of shredded carrot ๐๐๐ , lemon zest โค๏ธ , dijon ๐ฅ , dill ๐ฆ , along with salt and pepper ๐คช . Add the salmon mixture from the food processor ๐ and stir until it comes together ๐ ๐. Form into four patties ๐ฆ๐ฆ๐ฆ๐ฆ๐คค and chill for at least 30 minutes ๐ . Pan sautรฉ in ghee ๐ฅ๐ฆ or some other high-heat oil ๐งด for 4-5 mins per side until cooked through and nicely browned ๐ฅด.
