Pound of salmon

You can do it ๐Ÿ˜ณ  with canned ๐Ÿฅซ  but I went with fresh ๐Ÿ”ฅ ๐Ÿ’ฆ . 

I start with a pound ๐Ÿ’ฏ ๐Ÿ”จ  of salmon ๐ŸŸ๐Ÿ˜œ   (fresh  or canned), take half of it and put it in a food processor ๐Ÿ‘ with 1 egg ๐Ÿณ ๐Ÿ’ฆ๐Ÿ’ฆ๐Ÿ’ฆ and 1/4c of fresh parsely โ˜˜๏ธ ๐Ÿชด ๐Ÿšฌ ๐Ÿ˜Ž . Pulse it a few times ๐Ÿ‘‰ ๐Ÿ‘Œ until you have a coarse grind ๐Ÿ˜ ๐Ÿ˜ณ .

Take the other half of the salmon ๐ŸŽฃ  and cut it into a 1/4" dice, put it in a bowl ๐Ÿฅด with 1/3-1/2c (depending on preference) of panko, 1/2 cup of shredded carrot ๐Ÿ†๐Ÿ†๐Ÿ† , lemon zest โค๏ธ , dijon ๐Ÿ”ฅ , dill ๐Ÿ’ฆ , along with salt and pepper ๐Ÿคช .

Add the salmon mixture from the food processor ๐Ÿ‘ and stir until it comes together  ๐Ÿ‘‰ ๐Ÿ‘Œ. Form into four patties ๐Ÿ’ฆ๐Ÿ’ฆ๐Ÿ’ฆ๐Ÿ’ฆ๐Ÿคค  and chill for at least 30 minutes ๐Ÿ˜Ž .

Pan sautรฉ in ghee ๐Ÿ”ฅ๐Ÿ’ฆ or some other high-heat oil ๐Ÿงด for 4-5 mins per side until cooked through and nicely browned ๐Ÿฅด.
